Preparation
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
- In a large mixing bowl, use an electric mixer to cream the softened butter and granulated sugar until light and fluffy—about 3-4 minutes.
- Beat in the eggs one at a time, then add the vanilla, lemon zest, and lemon juice. Continue mixing until combined.
- Alternate adding the dry mix and buttermilk to the wet mixture, starting and ending with dry ingredients. Mix until just combined—be careful not to overmix!
- Gently fold the fresh blueberries into the batter, ensuring they are evenly distributed.
- Pour the batter into the prepared cake pan and spread it evenly.
Baking
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack. Slice and enjoy!
