Preparation
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or use parchment paper for easy removal.
- In a mixing bowl, cream together the softened butter and sugar until light and fluffy, about 3-5 minutes.
- Add the eggs, one at a time, beating well after each addition. Stir in the lemon zest and lemon juice.
Mixing Batter
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry mixture to the butter mixture, alternating with the milk. Mix until just combined.
- Gently fold in the fresh blueberries, being careful not to overmix.
Baking
- Pour the batter into the prepared pan and smooth the top. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack. Dust with powdered sugar before serving, if desired.
Notes
For best results, ensure all ingredients are at room temperature. If you’re out of blueberries, feel free to use raspberries or strawberries. Keep an eye on the cake during the last few minutes of baking to prevent over-browning. Store leftovers in an airtight container in the refrigerator for up to 5 days.
