  • 2 cups leftover roast beef, shredded or diced Use any leftover roast beef you have.
  • 1 cup beef broth Check for halal certification.
  • 1 cup frozen mixed vegetables (peas, carrots, corn) Thawed before adding.
  • 2 tablespoons olive oil or butter For sautéing.
  • 1 small onion, diced Adds flavor to the filling.
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce Use non-alcoholic if needed.
  • to taste Salt and black pepper
For the topping
  • 4 cups mashed potatoes Can be homemade or store-bought.
  • 1 cup grated cheese Optional, try cheddar or mozzarella.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat the olive oil on medium heat. Add the diced onions and sauté for about 3-4 minutes until translucent.
  3. Add the minced garlic and cook for an additional minute.
  4. Add the shredded roast beef to the skillet, stirring until heated through. Season with Worcestershire sauce, salt, and pepper.
  5. Stir in the thawed mixed vegetables until everything is well combined.
  6. Pour in the beef broth and allow the mixture to simmer for about 5 minutes until it thickens.
Assembly
  1. Spoon the beef mixture into a baking dish, spreading it out evenly.
  2. Top generously with mashed potatoes, smoothing it out with a spatula. Sprinkle with grated cheese if desired.
Baking
  1. Place the dish in the preheated oven and bake for about 25-30 minutes, or until the top is golden brown and the filling is bubbling.
  2. Let it cool for a few minutes before serving.

Notes

Feel free to adjust ingredient quantities based on your preference. For a healthier twist, consider using sweet potatoes or cauliflower mash instead of regular mashed potatoes. Ensure the filling is not too watery; simmer longer if necessary.
