Preparation
- In a large mixing bowl, combine the all-purpose flour and semolina. Add the softened butter and powdered sugar. Mix with your hands or a spoon until crumbly and well-blended.
- In a small bowl, dissolve the yeast in warm water. Let it sit for about 5 minutes until foamy.
- Gradually add the activated yeast mixture into the flour mixture, stirring until a dough forms. Knead the dough lightly until smooth and pliable. Cover the bowl with a clean kitchen towel and let it rest for about 30 minutes.
- While the dough is resting, prepare your fillings. Chop walnuts, pistachios, or dates finely, depending on what you choose.
Baking
- Take a small amount of dough in your hands (about the size of a walnut). Create a small bowl shape in your palm and fill it with your chosen filling. Pinch the edges together to seal, then gently shape it into a ball or flatten it slightly.
- Preheat oven to 350°F (175°C). Place the formed cookies on a lined baking sheet. Bake for 15-20 minutes or until they turn a light golden color.
- Let the cookies cool completely on a wire rack. Dust with powdered sugar before serving.
Notes
Store cookies in an airtight container at room temperature for up to one week or refrigerate for a longer shelf life. They freeze well for up to three months.
