  • 1/4 cup fresh cilantro, chopped Can substitute with parsley if desired.
  • 2 pieces limes, juiced Essential for a tangy flavor.

Method

Preparation
  1. Start by washing your tomatoes, jalapeño, and cilantro thoroughly. Dice the tomatoes into bite-sized pieces and finely chop the onion.
  2. Remove the seeds of the jalapeño before mincing it for a milder flavor.
Mixing
  1. In a medium-sized mixing bowl, combine the diced tomatoes, chopped onion, and minced jalapeño. Stir gently to keep the tomato pieces intact.
Adding Freshness
  1. Toss in the chopped cilantro and squeeze in the juice of two limes. A generous sprinkle of salt will enhance the flavors, but remember to taste and adjust as needed.
Resting
  1. For the best flavor, allow the salsa to sit for about 10 minutes before serving. This waiting period helps the ingredients meld together beautifully.
Serving
  1. Enjoy your Lazy Day Salsa as a dip, or serve it over grilled chicken or fish for an added burst of freshness!

Notes

Best enjoyed fresh, but can be stored in the refrigerator for up to 3 days in an airtight container. Freezing is not recommended due to texture changes. Consider using leftovers as a topping for quesadillas or tacos.
