  • 4 medium-sized potatoes, peeled and chopped into bite-sized pieces
  • 2 tablespoons soy sauce
  • 2 tablespoons sugar (brown sugar works too!)
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 small onion, sliced
  • 1 tablespoon vegetable oil
  • 1 cup of water
  • 1 green onion, chopped (for garnish)
  • Sesame seeds (optional for garnish)

Method
 

Preparation
  1. Wash, peel, and cut the potatoes into bite-sized pieces.
  2. In a large pan, heat vegetable oil over medium heat. Add the sliced onions and minced garlic, stirring until fragrant and slightly translucent.
  3. Toss in the chopped potatoes, stirring them well with the sautéed onions and garlic for about 2-3 minutes.
Cooking
  1. In a separate bowl, combine soy sauce, sugar, sesame oil, and water. Mix until the sugar is dissolved.
  2. Pour the sauce over the potatoes in the pan. Increase the heat until it reaches a gentle boil, then reduce to low heat.
  3. Let it simmer for 15-20 minutes, or until the potatoes are tender and the sauce thickens.
  4. Once the potatoes are cooked through, give them a gentle toss in the sauce to coat. Garnish with chopped green onions and sesame seeds if desired. Serve hot!

Notes

Choose starchy potatoes like russets for a fluffy texture or waxy potatoes for better shape retention. Adjust sugar for sweetness preference. Stir occasionally to ensure even sauce absorption.
