  • 1 pound kielbasa sausage, sliced Can substitute with turkey or plant-based sausage.
  • 4 cups potatoes, peeled and diced Ensure not to overcook during boiling.
  • 1 cup shredded cheese Cheddar or any preferred cheese.
  • 1 cup sour cream
  • 1 medium onion, chopped
  • 1 cup milk
  • 1 teaspoon garlic powder
  • Salt and pepper to taste salt and pepper to taste
  • 1 cup breadcrumbs Optional for topping.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, bring water to a boil. Add the diced potatoes and cook until just tender, about 10 minutes. Drain and set aside.
  3. In a skillet over medium heat, add a bit of oil and sauté the chopped onions until translucent, about 3–4 minutes.
  4. In a large mixing bowl, stir together the cooked potatoes, sautéed onions, sliced kielbasa, shredded cheese, sour cream, milk, garlic powder, salt, and pepper until well incorporated.
Baking
  1. Pour the mixture into a greased 9x13-inch casserole dish. If using breadcrumbs, sprinkle them evenly on top.
  2. Place the casserole in the preheated oven and bake for 30–35 minutes, or until bubbly and golden brown on top.
  3. Once out of the oven, let the casserole cool for a few minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat in the oven at 350°F (175°C) for 20–30 minutes, adding milk if needed.
