Preparation
- Preheat your oven to 350°F (175°C).
- In a large pot, bring water to a boil. Add the diced potatoes and cook until just tender, about 10 minutes. Drain and set aside.
- In a skillet over medium heat, add a bit of oil and sauté the chopped onions until translucent, about 3–4 minutes.
- In a large mixing bowl, stir together the cooked potatoes, sautéed onions, sliced kielbasa, shredded cheese, sour cream, milk, garlic powder, salt, and pepper until well incorporated.
Baking
- Pour the mixture into a greased 9x13-inch casserole dish. If using breadcrumbs, sprinkle them evenly on top.
- Place the casserole in the preheated oven and bake for 30–35 minutes, or until bubbly and golden brown on top.
- Once out of the oven, let the casserole cool for a few minutes before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat in the oven at 350°F (175°C) for 20–30 minutes, adding milk if needed.
