Ingredients

For the marinade
  • 4 pieces boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 pieces juices of limes
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
For garnish
  • Fresh cilantro for garnish

Method

Marination
  1. In a bowl, whisk together the olive oil, lime juice, oregano, garlic powder, salt, and pepper. Place the chicken in a large resealable bag or a shallow dish.
  2. Pour the marinade over the chicken, ensuring they’re well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably for 2-4 hours.
Grilling
  1. Preheat your grill to around 400°F (200°C).
  2. Remove the chicken from the marinade and discard the marinade. Place the chicken on the grill.
  3. Grill for 5-7 minutes on one side, then flip and grill for an additional 5-7 minutes until the internal temperature reaches 165°F (75°C).
Serving
  1. Once cooked, remove the chicken from the grill and let it rest for about 5 minutes.
  2. Garnish with fresh cilantro before serving.

Notes

Avoid grilling on extremely high heat to ensure even cooking. Don’t skip the marination step, as it fills the chicken with flavor. Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
