Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the mixture resembles wet sand.
- Line an 8x8-inch baking dish with parchment paper. Press the graham cracker mixture firmly into the bottom of the dish to form an even layer. Bake for about 10 minutes or until lightly golden, then remove and let it cool.
- In a clean bowl, whisk together the key lime juice, eggs, lime zest, and a pinch of salt until fully combined. Pour this mixture over the cooled crust.
- Return to the oven and bake for another 15-20 minutes, or until the filling is set but still slightly jiggly in the center.
- Allow the bars to cool at room temperature, then refrigerate for at least 2 hours before slicing into squares.
- Optional: Top with a dollop of whipped cream or a sprinkle of lime zest for that extra touch!
Notes
Use fresh key lime juice for the best flavor. If you can’t find key limes, Persian limes work in a pinch. Avoid overcooking; bars should be set but slightly jiggly. Chill thoroughly for ideal texture.
