Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg, key lime juice, lime zest, and vanilla extract until well combined.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing until just incorporated.
- Using a cookie scoop or tablespoon, place rounded balls of dough on a baking sheet lined with parchment paper, spacing about 2 inches apart.
Baking
- Bake for 10-12 minutes. The edges should be lightly golden, while the centers will still look soft.
Glazing
- While the cookies are cooling, whisk together the powdered sugar, key lime juice, and lime zest in a small bowl until smooth.
- Once the cookies have cooled, drizzle the lime glaze on top.

Notes
Store cookies in an airtight container at room temperature for up to a week. Freeze for up to 3 months. Thaw at room temperature or reheat in the microwave for 10-15 seconds.
