Ingredients
  

For the Cookies
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened Can substitute with coconut oil or vegan butter.
  • 1 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 large egg
  • 1 tablespoon key lime juice
  • 1 teaspoon lime zest
  • 1/4 teaspoon vanilla extract
For the Glaze
  • 1 cup powdered sugar For glaze.
  • 2 tablespoons key lime juice For glaze.
  • 1 teaspoon lime zest For glaze.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the egg, key lime juice, lime zest, and vanilla extract until well combined.
  5. Gradually add the dry ingredient mixture to the wet ingredients, mixing until just incorporated.
  6. Using a cookie scoop or tablespoon, place rounded balls of dough on a baking sheet lined with parchment paper, spacing about 2 inches apart.
Baking
  1. Bake for 10-12 minutes. The edges should be lightly golden, while the centers will still look soft.
Glazing
  1. While the cookies are cooling, whisk together the powdered sugar, key lime juice, and lime zest in a small bowl until smooth.
  2. Once the cookies have cooled, drizzle the lime glaze on top.
Serving
  1. Serve fresh with tea or coffee, or save some for later.

Notes

Store cookies in an airtight container at room temperature for up to a week. Freeze for up to 3 months. Thaw at room temperature or reheat in the microwave for 10-15 seconds.
