Preparation
- Preheat your oven to 375°F (190°C).
- Pat the chicken breasts dry and season both sides with salt and pepper.
Cooking
- In a skillet, heat the olive oil over medium-high heat. Once hot, gently add the chicken breasts. Sear for about 3-4 minutes on each side until they turn golden brown.
- Transfer the chicken to a baking dish. Spoon the pesto sauce generously over the top of each chicken breast.
- Top the pesto-covered chicken with grated Parmesan cheese.
- Place the baking dish in the oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
- If desired, add cherry tomatoes on top during the last 5 minutes of baking.
- Remove from oven and allow to rest for a few minutes before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a preheated oven at 350°F (175°C) for about 10-15 minutes. For variations, you can add spinach or bell peppers or substitute with tofu for a vegetarian version.
