- In a large mixing bowl, combine the almond flour, peanut butter (or almond butter), cocoa powder, sugar-free sweetener, melted coconut oil, and vanilla extract. Use a spatula or spoon to mix everything until well combined.
- If you’re using sugar-free chocolate chips, fold them into the mixture.
- With clean hands, scoop about a tablespoon of dough and roll it into a ball. Repeat the process with the remaining mixture.
- Place the energy balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to solidify.
- Once chilled, they are ready to serve! Store any leftovers in an airtight container in the fridge.
Notes
These energy balls can last up to one week in the refrigerator. For longer storage, they can be frozen for 1-2 months.
