  • 2 cups heavy cream
Dry Ingredients
  • 1/2 cup almond flour Can be substituted with coconut flour.
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup sweetener (erythritol or stevia)
  • 1 tsp vanilla extract
Toppings
  • sugar-free gummy worms For topping.
  • Crushed nuts or cocoa nibs For decoration.

Method

Preparation
  1. In a large mixing bowl, whisk together the sugar-free chocolate pudding mix with 2 cups of heavy cream until it thickens. This should take about 2-3 minutes.
  2. In another bowl, mix together almond flour, unsweetened cocoa powder, and sweetener until evenly combined.
Layering
  1. In a serving dish, start by adding a layer of the chocolate pudding mixture, then sprinkle a layer of your dry ingredients over it. Repeat alternating layers until all ingredients are used, finishing with the pudding layer on top.
Finishing Touches
  1. Decorate your creation with sugar-free gummy worms and sprinkle crushed nuts or cocoa nibs on top for that extra crunch.
  2. Cover your cake and let it chill in the refrigerator for at least 1-2 hours before serving.
