Ingredients
  

Main Ingredients
  • 4 cups mixed greens like spinach, arugula, and romaine
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 ripe avocado, diced
  • 1 small red onion, thinly sliced
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt, to taste
  • Pepper, to taste

Method
 

Preparation
  1. Rinse the mixed greens thoroughly and pat them dry with a clean kitchen towel.
  2. Cut the cherry tomatoes in half, dice the cucumber, and chop the avocado.
  3. Slice the red onion as thinly as possible.
Assembly
  1. In a large salad bowl, add your mixed greens.
  2. Layer in the cherry tomatoes, diced cucumber, and sliced red onion.
Dressing Preparation
  1. In a small bowl, whisk together the olive oil and lemon juice.
  2. Season with salt and pepper according to your taste.
Combine and Serve
  1. Drizzle the dressing over the salad base and gently toss everything together.
  2. Just before serving, gently fold in the diced avocado.
  3. Serve your Kardashian Salad immediately.

Notes

For substitutions, you can use green onions or radishes. Assemble the salad just before serving to keep it crisp. Store leftovers in an airtight container and use within 1-2 days.
