Preparation
- Rinse the quinoa under cold water using a fine-mesh strainer.
- In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the water is absorbed.
- Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
- While the quinoa cooks, wash and chop kale into bite-sized pieces. In a large bowl, drizzle a small amount of olive oil and massage the kale for a few minutes to soften it.
Combining Ingredients
- Add the cooked quinoa, white beans, remaining olive oil, lemon juice, salt, and pepper to the kale.
- Toss everything together until well mixed.
Taste and Serve
- Taste and adjust the seasoning if necessary. Add more lemon juice for a zesty kick, if desired.
- Enjoy immediately or chill in the fridge to enhance flavors.
Notes
For variations, switch out white beans for chickpeas or lentils. Ensure you massage the kale properly for the best texture.
