  • 8 ounces pasta (penne or rotini) Any short pasta can work, penne or rotini recommended.
  • 2 cups kale, chopped Make sure to use fresh, crunchy kale.
  • 1 cup cherry tomatoes, halved For a pop of sweetness and color.
  • 1/2 cup shredded carrots Adds a nice crunch.
  • 1/2 cup creamy Caesar dressing Or any creamy dressing of your choice.
  • 1/4 cup grated Parmesan cheese For added flavor.
  • to taste Salt and pepper Use as necessary to enhance flavor.

Method
 

Cooking the Pasta
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente, typically about 8-10 minutes.
  2. Drain and rinse with cold water to cool it down.
Prepare the Kale
  1. While the pasta is cooking, wash and chop your kale into bite-sized pieces.
Combine Ingredients
  1. In a large mixing bowl, combine the cooled pasta, chopped kale, halved cherry tomatoes, and shredded carrots.
Add the Dressing
  1. Pour the creamy Caesar dressing over the salad mixture.
  2. Season with salt and pepper to taste and give everything a gentle toss so the dressing thoroughly coats all the ingredients.
Finish Up
  1. Finally, sprinkle the grated Parmesan cheese over the top and toss again.
  2. Serve immediately for the best texture and freshness.

Notes

Make sure to avoid any pork-based or alcohol ingredients for Halal compliance. Store leftovers in an airtight container for up to 3 days, but best enjoyed fresh.
