  • 1 lb beef, cut into cubes Use chuck roast for best results.
  • 2 medium potatoes, peeled and cubed
  • 1 medium onion, sliced
  • 2 medium carrots, sliced
  • 2 tablespoons curry powder Adjust to taste for spice level.
  • 2 tablespoons soy sauce
  • 4 cups beef broth Homemade or low-sodium recommended.
  • 2 tablespoons vegetable oil For sautéing.

Method
 

Preparation
  1. Heat the vegetable oil in a large pot over medium heat. Add the sliced onion and sauté until they turn translucent.
  2. Add the beef cubes to the pot and cook until they’re browned on all sides.
  3. Toss in the cubed potatoes and sliced carrots. Stir them well to coat them in the flavors.
  4. Sprinkle the curry powder and mix everything thoroughly.
  5. Carefully add the beef broth and soy sauce. Stir to combine all the ingredients.
  6. Bring the mixture to a gentle boil, then reduce the heat to low. Let it simmer for about 40 minutes to an hour, or until the beef and vegetables are tender. Add salt and pepper to taste.
  7. Once everything is cooked through, serve it over a heap of fluffy rice, and don’t forget your favorite toppings.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months. Reheat gently, adding a splash of water or broth to maintain texture.
