Preparation
- Begin by chopping your onion, slicing the carrots, and cubing the potatoes to ensure even cooking.
Cooking
- In a large pot, heat a couple of tablespoons of vegetable oil over medium-high heat.
- Add the beef pieces, allowing them to brown on all sides for about 5-7 minutes.
- Toss in the chopped onion and sauté until they become translucent, roughly 3-4 minutes.
- Mix in the carrots and potatoes, sautéing for another 5 minutes.
- Slowly add the beef broth, ensuring everything is nicely submerged. Bring the pot to a boil.
- Stir in the curry powder, soy sauce, sugar, salt, and pepper. Reduce the heat and let it simmer for 30 minutes.
- Give it a taste, and adjust seasoning if needed.
- Serve hot over steamed rice, garnished with optional green onions or additional soy sauce as desired.
Notes
For substitutions, you can use chicken or chickpeas for a vegetarian option. Simmering longer will enhance the flavors, and to ensure a thick sauce, avoid adding too much liquid.
