  • 1 lb beef, cut into bite-sized pieces
  • 2 tablespoons curry powder
  • 1 medium onion, chopped
  • 2 medium carrots, sliced
  • 2 medium potatoes, cubed
  • 4 cups beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • Vegetable oil for frying

Preparation
  1. Begin by chopping your onion, slicing the carrots, and cubing the potatoes to ensure even cooking.
Cooking
  1. In a large pot, heat a couple of tablespoons of vegetable oil over medium-high heat.
  2. Add the beef pieces, allowing them to brown on all sides for about 5-7 minutes.
  3. Toss in the chopped onion and sauté until they become translucent, roughly 3-4 minutes.
  4. Mix in the carrots and potatoes, sautéing for another 5 minutes.
  5. Slowly add the beef broth, ensuring everything is nicely submerged. Bring the pot to a boil.
  6. Stir in the curry powder, soy sauce, sugar, salt, and pepper. Reduce the heat and let it simmer for 30 minutes.
  7. Give it a taste, and adjust seasoning if needed.
  8. Serve hot over steamed rice, garnished with optional green onions or additional soy sauce as desired.

Notes

For substitutions, you can use chicken or chickpeas for a vegetarian option. Simmering longer will enhance the flavors, and to ensure a thick sauce, avoid adding too much liquid.
