Ingredients
  

For the Jalapeno Filling
  • 12 large jalapeno peppers Cut in half lengthwise and seeds removed.
  • 8 oz cream cheese Softened.
  • 1 cup cheddar cheese Shredded.
  • ½ teaspoon salt
  • ½ teaspoon pepper
For Coating
  • 1 cup breadcrumbs For coating.
  • 2 tablespoons olive oil For rolling.
For Garnish
  • ¼ cup green onions Chopped (optional for garnish).

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Carefully cut the jalapeno peppers in half lengthwise and remove the seeds. Wear gloves if you have sensitive skin.
Making the Filling
  1. In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, salt, and pepper. Mix until smooth and creamy.
Stuffing the Jalapeños
  1. Generously fill each half of the jalapeno with the cheese mixture, ensuring they’re well-packed.
Coating the Bites
  1. In a separate bowl, place the breadcrumbs. Gently roll each stuffed jalapeno in olive oil before coating with breadcrumbs to create a crispy layer.
Baking
  1. Place the coated jalapeno popper bites on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown and bubbling.
Serving
  1. After baking, let them cool slightly before serving. Sprinkle chopped green onions on top for garnish.

Substitutions: Use dairy-free cream cheese for a non-dairy option. Ensure your oven is fully preheated to get a perfect crispy finish.
