  • 1 pound Italian sausage (ensure it’s Halal-compliant)
  • 6 large eggs
  • 4 large flour tortillas
  • 1 cup shredded mozzarella cheese
  • 1 large bell pepper, diced (red, yellow, or green)
  • 1 small onion, diced
  • Salt and pepper, to taste
  • Olive oil (optional for sautéing)

  1. In a large skillet over medium heat, add the Halal Italian sausage. Break it up with a spatula and cook until browned and fully cooked, usually about 6-8 minutes.
  2. Once the sausage is cooked, add the diced onion and bell pepper to the skillet. If you prefer, add a drizzle of olive oil. Sauté for about 3-4 minutes, or until the vegetables soften.
  3. In a bowl, whisk together the eggs, salt, and pepper. Pour the egg mixture into the skillet with the sausage and vegetables. Cook while stirring gently until the eggs are fluffy and set, about 4-5 minutes.
  4. Lay out the tortillas and evenly distribute the egg mixture in the center of each one. Top with shredded mozzarella cheese.
  5. Fold the sides of the tortillas over the filling, then roll from the bottom to the top, securing the filling inside.
  6. You can either serve them as is or toast them in a skillet for 2-3 minutes on each side for a crispy finish!

Notes

For substitutions, consider using turkey sausage or a plant-based sausage substitute that is Halal. Make sure not to overcook the eggs to avoid a rubbery texture. Avoid overfilling your tortillas for easier wrapping. Leftover burritos can be stored in the refrigerator for 3-4 days or frozen for up to 2 months.
