Ingredients
  

For the crust
  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed Ensure the butter is cold for a flaky crust.
  • 1 large egg
  • 1 teaspoon vanilla extract
For the filling
  • 4-5 pieces Italian plums, pitted and sliced Fresh plums are ideal for flavor.
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon lemon juice

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the flour, powdered sugar, and salt. Add the chilled butter and create a sandy texture.
  3. Add the egg and vanilla extract, mix until just combined, wrap the dough in plastic wrap, and refrigerate for 30 minutes.
  4. Slice the plums and toss them in a bowl with granulated sugar, ground cinnamon, and lemon juice.
Assembly and Baking
  1. Roll out the chilled dough on a floured surface to about 1/8 inch thick and place it in a tart pan, trimming any excess.
  2. Pour the prepared plums into the tart shell, spreading them evenly.
  3. Bake for 30-35 minutes, or until the crust is golden brown and the plums are bubbly.
  4. Allow the tart to cool before slicing. Dust with powdered sugar if desired.

Notes

Consider using nectarines or peaches for a different flavor. Ensure to chill the dough for a tender result.
