Preparation
- Season the chicken breasts with salt, pepper, and Italian seasoning on both sides.
Cooking
- Heat the olive oil in a large skillet over medium heat.
- Add the chicken breasts and cook them for about 6-7 minutes on each side until they are golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the chopped spinach and cook for 2-3 minutes until wilted.
- Return the chicken to the skillet and pour the marinara sauce over the top. Sprinkle the mozzarella cheese evenly on the chicken.
- Cover the skillet and allow it to simmer for about 5 minutes, or until the cheese melts.
Serving
- Garnish with fresh basil, if desired, and serve warm.
