- Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
- In a large bowl, beat the room temperature butter and 1/4 cup of powdered sugar until it is smooth and creamy.
- Mix in the flour, ground almonds, salt, and vanilla extract until combined. The dough should be soft but not sticky.
- Scoop out a tablespoon of dough and roll it into a ball, placing it on the prepared baking sheet. Repeat this until the sheet is filled, leaving some space between each cookie as they will puff a little.
- Bake in the preheated oven for 15-18 minutes or until the bottoms are lightly golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack. Once they're fully cooled, dust them generously with powdered sugar.
