  • 2 cups all-purpose flour
  • 1 cup finely ground almonds (almond flour) Should be finely ground for the right texture.
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. In a large bowl, beat the room temperature butter and 1/4 cup of powdered sugar until it is smooth and creamy.
  3. Mix in the flour, ground almonds, salt, and vanilla extract until combined. The dough should be soft but not sticky.
  4. Scoop out a tablespoon of dough and roll it into a ball, placing it on the prepared baking sheet. Repeat this until the sheet is filled, leaving some space between each cookie as they will puff a little.
  5. Bake in the preheated oven for 15-18 minutes or until the bottoms are lightly golden.
  6. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack. Once they're fully cooled, dust them generously with powdered sugar.
