  • 1 cup cooked, seasoned ground chicken or turkey Can substitute with ground beef or a plant-based option.
  • 1/2 cup chopped fresh vegetables (bell peppers, onions, or spinach) Mix and match vegetables for variety.
  • 1/4 cup fresh herbs (parsley, cilantro, or basil) Use your favorite herbs for added flavor.
  • 1/2 cup all-purpose flour Gluten-free flour can be used as a substitute.
  • Salt and pepper to taste
  • 1/2 cup bread crumbs (optional for a crunch) For extra crunch, roll bites in bread crumbs before baking.
  • Cooking oil spray Essential for crispy edges.

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine the shredded cheese, cooked ground chicken or turkey, chopped vegetables, and fresh herbs. Season with salt and pepper to taste.
  3. Gradually mix in the flour, using your hands to combine until the mixture holds together.
  4. Shape the mixture into small, bite-sized balls and roll each ball in bread crumbs if using, for that extra crunch!
  5. Place the bites on a baking sheet lined with parchment paper. Give each a quick spritz of cooking oil to help them crisp up.
  6. Bake for 15-20 minutes, or until golden brown and crispy on the outside.
  7. Remove from the oven and let cool briefly. These bites are best served warm!

Notes

Store leftovers in an airtight container in the fridge for up to three days or freeze for up to a month. Reheat in a preheated oven at 375°F (190°C) for 10-15 minutes to restore crunch.
