- In a mixing bowl, crack the eggs and whisk them until fully blended. A fork works great for this task!
- Stir in the cottage cheese until the mixture is well combined.
- Add a pinch of salt and pepper to taste, adjusting as needed.
- On medium heat, melt butter in a non-stick skillet.
- Pour the egg mixture into the skillet and let it sit for a few seconds before gently stirring.
- Continue to cook, folding the eggs over themselves until soft and slightly runny.
- Remove from heat and serve immediately, garnishing with chopped chives or herbs.
Notes
Store leftovers in an airtight container in the refrigerator for 1-2 days. Reheat gently in the microwave.
