Preparation
  1. In a mixing bowl, crack the eggs and whisk them until fully blended. A fork works great for this task!
  2. Stir in the cottage cheese until the mixture is well combined.
  3. Add a pinch of salt and pepper to taste, adjusting as needed.
  4. On medium heat, melt butter in a non-stick skillet.
  5. Pour the egg mixture into the skillet and let it sit for a few seconds before gently stirring.
  6. Continue to cook, folding the eggs over themselves until soft and slightly runny.
  7. Remove from heat and serve immediately, garnishing with chopped chives or herbs.

Notes

Store leftovers in an airtight container in the refrigerator for 1-2 days. Reheat gently in the microwave.
