  • 1 cup cooked and mashed potatoes Ensure they are well-prepared
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup finely chopped green onions
  • 1/2 cup breadcrumbs Ensure they are Halal certified
Seasoning
  • 1 teaspoon garlic powder
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine cooked mashed potatoes, shredded cheese, and green onions. Stir until thoroughly mixed.
  3. Add garlic powder, salt, and pepper to your mixture, giving everything a nice flavor boost.
  4. Take small portions of the mixture and form them into bite-sized balls (about 1-2 tablespoons each). Roll each ball into the breadcrumbs to coat.
  5. Place the balls on a parchment-lined baking sheet. Brush the tops lightly with oil to help them become crispy.
Baking
  1. Slide the baking sheet into the preheated oven and bake for 15-20 minutes, or until they turn golden brown and crispy.
  2. Let them cool for a minute, then serve warm with your favorite dipping sauce.

Notes

Substitutions include adding cooked chicken or other cheeses like feta. Prep ahead and refrigerate the shaped balls for up to 2 hours before baking to maintain shape. Ensure the mixture isn't too wet; add more breadcrumbs if necessary. Refrigerate leftovers for up to 3 days or freeze uncooked bites for up to 3 months.
