Preparation
- Season the chicken thighs or breasts with salt, pepper, garlic powder, onion powder, and smoked paprika.
Sauté
- Turn your Instant Pot to the ‘Sauté’ function. Add olive oil, and when it’s hot, place the seasoned chicken into the pot.
- Sear the chicken for about 3-4 minutes on each side until browned.
Cooking
- Once the chicken is browned, pour in the BBQ sauce and stir to coat the chicken completely.
- Secure the lid on your Instant Pot and set the valve to the sealing position.
- Select the ‘Manual’ or ‘Pressure Cook’ setting and cook on High Pressure for 10 minutes.
Finishing
- Once the cooking time is complete, let the pressure release naturally for 5 minutes, then perform a quick release for any remaining pressure.
- Carefully remove the chicken from the pot. Shred it with forks or keep it whole as per your preference.
- Plate it up with additional BBQ sauce on the side, garnished with fresh parsley if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stove with additional BBQ sauce to maintain moisture.
