Ingredients
  

Main Ingredients
  • 2 lbs chicken thighs (or breasts, if you prefer) Thighs are juicier; breasts are leaner.
  • 1 cup BBQ sauce Your favorite brand or homemade.
  • 1 tablespoon olive oil For sautéing the chicken.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional: fresh parsley for garnish For serving.

Method
 

Preparation
  1. Season the chicken thighs or breasts with salt, pepper, garlic powder, onion powder, and smoked paprika.
Sauté
  1. Turn your Instant Pot to the ‘Sauté’ function. Add olive oil, and when it’s hot, place the seasoned chicken into the pot.
  2. Sear the chicken for about 3-4 minutes on each side until browned.
Cooking
  1. Once the chicken is browned, pour in the BBQ sauce and stir to coat the chicken completely.
  2. Secure the lid on your Instant Pot and set the valve to the sealing position.
  3. Select the ‘Manual’ or ‘Pressure Cook’ setting and cook on High Pressure for 10 minutes.
Finishing
  1. Once the cooking time is complete, let the pressure release naturally for 5 minutes, then perform a quick release for any remaining pressure.
  2. Carefully remove the chicken from the pot. Shred it with forks or keep it whole as per your preference.
  3. Plate it up with additional BBQ sauce on the side, garnished with fresh parsley if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stove with additional BBQ sauce to maintain moisture.
