  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper for easy removal.
  2. In a large bowl, combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Stir well to evenly distribute.
  3. In another bowl, whisk together the granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth.
  4. Gradually add the wet mixture to the dry ingredients. Gently fold them together until just combined, avoiding overmixing.
  5. Carefully fold in the diced apples and nuts (if using) until evenly distributed within the batter.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Place in the preheated oven and bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
