Ingredients
  

For the Bars
  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 cups old-fashioned oats
For the Icing
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract for icing

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) to ensure even baking.
  2. Grease a 9x13 inch baking dish or line it with parchment paper.
  3. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, followed by the vanilla extract, ensuring it's well combined.
  5. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, mixing until just incorporated.
  6. Stir in the old-fashioned oats until evenly distributed throughout the batter.
  7. Spread the batter evenly into the prepared baking dish.
Baking
  1. Bake in the preheated oven for 25 minutes, or until a toothpick inserted in the center comes out clean.
Making the Icing
  1. While the bars are baking, whisk together powdered sugar, milk, and vanilla extract until smooth.
Cooling and Serving
  1. Once baked, let the bars cool completely before spreading the icing on top.
  2. Cut into squares and enjoy!

Notes

Store in an airtight container at room temperature for up to 5 days or refrigerate for up to 10 days. For longer storage, wrap each bar in plastic wrap and freeze for up to 3 months.
