Ingredients

For the Sandwich
  • 2 pieces Bagels (your choice: plain, whole grain, or everything)
  • 1 cup Hummus (store-bought or homemade)
  • 8 oz Turkey slices (preferably halal)
  • 1 cup Mixed veggies (such as lettuce, tomato, cucumber, and bell pepper)
  • Salt and pepper to taste

Method

Preparation
  1. Start by washing your mixed veggies thoroughly. Chop them into bite-sized pieces. For the tomato and cucumber, slicing them into thin rounds will keep things crisp and delightful.
  2. If you prefer warm, crispy bagels, pop them into a toaster or under the broiler for a few minutes until golden brown.
  3. Take your prepared bagel halves and generously spread hummus on both sides. Don’t skimp on this layer; the creaminess adds a mouthwatering flavor!
  4. Layer your turkey slices on top of one half of the bagel, followed by the mixed veggies, arranging them evenly to ensure every bite has a colorful crunch.
  5. Sprinkle salt and pepper over the layers as desired.
  6. Place the other half of the bagel on top to create your sandwich.
  7. Cut the sandwich in half, serve it on a plate, and enjoy your delicious creation.

Notes

Feel free to swap out the turkey slices for grilled chicken or roasted veggies for a vegetarian option. Prepare your veggies in advance for quick assembly. Store leftovers separately in airtight containers; the bagels are best at room temperature while turkey and veggies can be refrigerated for up to three days.
