Ingredients
  

For the Filling
  • 2 cups shredded cooked chicken You can use rotisserie chicken as a shortcut.
  • 1/2 cup hot honey Adjust to taste.
For the Quesadillas
  • 1 cup shredded cheddar cheese Feel free to substitute with your favorite cheese.
  • 1 cup shredded mozzarella cheese Mix and match cheeses as desired.
  • 4 large flour tortillas Use whole wheat tortillas for a healthier option.
  • 1/2 cup diced red onions Adds a nice crunch.
  • 1/4 cup chopped cilantro Fresh herbs enhance flavor.
  • as needed spray cooking spray or oil for grilling Ensure a non-stick cooking surface.

Method
 

Preparation
  1. In a mixing bowl, combine the shredded cooked chicken with hot honey. Make sure the chicken is well-coated to burst with flavor.
Assembly
  1. Heat a large skillet over medium heat and lightly grease it with cooking spray or oil. Place one tortilla in the skillet.
  2. Sprinkle half of the cheddar and mozzarella cheese over the tortilla.
  3. Spoon half of the chicken and hot honey mixture evenly over the cheese. Top with diced red onions and a sprinkle of cilantro. Add the remaining cheese before placing a second tortilla on top.
Cooking
  1. Allow the quesadilla to cook for about 2-3 minutes, until the bottom tortilla is golden brown and crispy.
  2. Carefully flip the quesadilla using a spatula and cook the other side for another 2-3 minutes until golden and the cheese has melted.
Serving
  1. Remove the quesadilla from the skillet and slice it into wedges. Serve hot with your favorite toppings!

Notes

Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 2 months. Reheat in a skillet or oven for best results.
