Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
- Add the eggs one at a time, mixing well after each addition, followed by the vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt, then gradually add this to the wet ingredients until combined.
- Fold in the chocolate chips and mini marshmallows.
Baking
- Scoop the dough onto a baking sheet lined with parchment paper, leaving about 2 inches between each cookie.
- Bake for 12-14 minutes, until the edges are set and the centers are slightly soft.
- Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For thicker cookies, chill the dough for 30 minutes before scooping. Store in an airtight container with a slice of bread to maintain moisture.
