  • 1 cup all-purpose flour Can substitute with almond or whole wheat flour
  • 1/2 cup honey Use quality honey for best flavor
  • 1/4 cup unsalted butter, softened
  • 2 large eggs Room temperature preferred
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract Adds lovely flavor

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease your loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, cream together the softened butter and honey until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Alternately add the flour mixture and milk to the butter mixture, starting and ending with the flour. Mix until just combined.
  6. Transfer batter to the prepared loaf pan, smoothing the top.
Baking
  1. Bake in the oven for 40-45 minutes, until a toothpick inserted in the center comes out clean.
  2. Allow the loaf to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Serving
  1. Once cooled, slice the loaf and serve as desired. Enjoy it plain or with a dollop of whipped cream.

Notes

Store wrapped tightly in plastic wrap in an airtight container at room temperature for up to 3 days. For longer storage, freeze for up to 3 months. Reheat at a low temperature.
