Glaze
  • 2 tablespoons honey Substitute maple syrup for a different flavor twist.
  • 2 tablespoons olive oil
  • 1 teaspoon salt To taste.
  • ½ teaspoon black pepper To taste.

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel the carrots and slice them into uniform sticks or rounds, about ½-inch thick.
  3. In a large mixing bowl, whisk together honey, olive oil, salt, and black pepper until well combined.
  4. Add the carrot pieces to the bowl and toss them in the honey mixture until every piece is nicely coated.
Cooking
  1. Spread the glazed carrots in a single layer on a baking sheet lined with parchment paper.
  2. Place the baking sheet in the preheated oven and roast the carrots for about 20-25 minutes, turning them halfway through, until they are tender and caramelized.
  3. Remove from the oven and transfer to a serving dish.
