Cupcake Ingredients
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened Ensure it is softened ahead of time.
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup cream cheese, softened Must be softened for best results.
  • 1/2 cup peach puree
  • 1/4 cup honey
  • to taste fresh peach slices for topping Can drizzle with additional honey if desired.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, beat the softened butter until creamy.
  4. Mix in the eggs and vanilla extract to the creamed butter, and continue beating until light and fluffy.
  5. Gradually mix the dry ingredient blend into the wet mixture until just combined.
  6. Fold in the cream cheese, peach puree, and honey. The batter should be smooth and fragrant.
  7. Divide the batter evenly among the cupcake liners, filling them about 2/3 full.
Baking
  1. Place in the oven and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow the cupcakes to cool completely before adding any toppings.
  3. Top each cupcake with fresh peach slices and drizzle additional honey if desired.

Notes

Store in an airtight container in the fridge for up to 5 days or freeze for up to three months. Thaw in the fridge overnight and warm in the microwave if desired.
