Preparation
- Preheat your oven to 350°F (175°C) and line a muffin pan with cupcake liners.
- In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Set aside.
- In another bowl, beat the softened butter until creamy.
- Mix in the eggs and vanilla extract to the creamed butter, and continue beating until light and fluffy.
- Gradually mix the dry ingredient blend into the wet mixture until just combined.
- Fold in the cream cheese, peach puree, and honey. The batter should be smooth and fragrant.
- Divide the batter evenly among the cupcake liners, filling them about 2/3 full.
Baking
- Place in the oven and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cupcakes to cool completely before adding any toppings.
- Top each cupcake with fresh peach slices and drizzle additional honey if desired.
Notes
Store in an airtight container in the fridge for up to 5 days or freeze for up to three months. Thaw in the fridge overnight and warm in the microwave if desired.
