For the Avocado Rice
  • 1 cup white rice (uncooked) You can use jasmine or basmati rice for additional aroma.
  • 1 ripe avocado, mashed Make sure it's ripe for easy mashing.
  • 1 lime juiced Use fresh lime juice.
  • ¼ teaspoon garlic powder
  • Salt to taste Adjust to preference.
Toppings
  • ½ cup cherry tomatoes, halved Add freshness and color.
  • ½ cup corn (canned or frozen) Sweet corn adds a nice touch.

Method
 

Preparation
  1. In a mixing bowl, combine honey, lime juice, lime zest, olive oil, garlic powder, salt, and pepper.
  2. Add the diced chicken, ensuring it's well-coated. Let this marinate for at least 15 minutes; if you have more time, even 30 minutes will enhance the flavor.
Cooking the Rice
  1. In a pot, cook the white rice according to package instructions. Once cooked, fluff it with a fork.
Prepare Avocado Rice
  1. In a bowl, combine the cooked rice, mashed avocado, lime juice, garlic powder, and salt. Mix well until creamy and set aside.
Sauté the Chicken
  1. Heat a skillet over medium-high heat. Add the marinated chicken, cooking for approximately 6-8 minutes or until each piece is golden and cooked through. Stir occasionally to ensure even cooking.
Assembly
  1. In a bowl or plate, start by adding a generous layer of avocado rice, then pile on the honey lime chicken.
  2. Finish with colorful toppings like cherry tomatoes, corn, cilantro, and crumble some tortilla chips on top for that delightful crunch!
