  • 2 pieces boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup lime juice
  • 1 piece avocado, diced
  • 2 cups cooked rice can be freshly made or reheated
  • 1/4 cup cilantro, chopped
  • to taste salt and pepper for seasoning
  • splash olive oil for cooking

Method
 

Preparation
  1. In a bowl, mix together the honey and lime juice. Add a pinch of salt and pepper for flavor. Place the chicken breasts into the bowl and allow them to marinate for about 15 minutes.
Cooking
  1. Heat a tablespoon of olive oil in a skillet over medium heat. Once hot, add the marinated chicken breasts and cook for about 5-7 minutes on each side, or until the chicken’s internal temperature reaches 165°F (75°C). Basting occasionally with the marinade will enhance the flavors!
Assembling
  1. While the chicken is cooking, heat your pre-cooked rice if it’s not freshly made. You can add a splash of lime juice for extra flavor if desired.
  2. Once the chicken is cooked, remove it from the skillet and let it rest for a few minutes. Slice the chicken into strips. In a bowl, layer the rice, sliced chicken, and diced avocado. Top with chopped cilantro.
Serving
  1. Squeeze fresh lime juice over the top for that zesty finish. Enjoy your delightful bowl filled with sweet and savory goodness!

Notes

For substitutions, you can try using agave syrup or maple syrup instead of honey. To keep your avocado fresh, slice it just before serving to prevent browning. Storing leftovers in an airtight container can keep it fresh for up to 3 days.
