Ingredients
  

Carrots
  • 1 lb Carrots, peeled and cut into even-sized batons
  • 3 tablespoons Honey
  • 2 tablespoons Olive oil
  • Salt, to taste
  • Pepper, to taste
Whipped Feta
  • 100 grams Feta cheese, crumbled
  • 3 tablespoons Cream or Greek yogurt For whipping
Garnish
  • Fresh herbs (like parsley or dill) For garnish

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the carrot batons with olive oil, honey, salt, and pepper until they are fully coated.
  3. Spread the carrots out in a single layer on a baking tray lined with parchment paper.
Cooking
  1. Roast the carrots for about 20 to 25 minutes, flipping halfway through until they are tender and caramelized.
  2. While the carrots are roasting, combine the crumbled feta cheese and cream or Greek yogurt in a bowl. Use a hand mixer or whisk to whip it until smooth and creamy.
  3. Once the carrots are done, toss them with fresh herbs for added flavor, and plate them alongside a generous dollop of whipped feta.

Notes

Feel free to switch honey for maple syrup for a vegan alternative. Watch the carrots closely during the last few minutes for optimal caramelization. Avoid overcrowding the baking tray for even cooking. Leftovers can be stored in an airtight container in the fridge for up to three days.
