Preparation
- If you’re using uncooked rice, cook it according to package instructions. Let it rest covered for about 10 minutes after cooking.
- In a medium bowl, combine honey, barbecue sauce, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the chicken to the mixture, ensuring it’s well-coated. Let it marinate for at least 15 minutes.
Cooking
- Heat olive oil in a large skillet over medium heat. Add the marinated chicken and cook for about 6-7 minutes on each side until cooked through.
- Transfer the chicken to a cutting board and let it rest. Pour the remaining marinade into the skillet and simmer for about 3-4 minutes until thickened slightly.
- Cut the chicken into bite-sized pieces and return it to the skillet, mixing it well with the sauce.
Serving
- Serve by laying down a generous helping of cooked rice on plates. Top with honey BBQ chicken and drizzle extra sauce from the skillet on top. Garnish with chopped green onions and sesame seeds as desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or stovetop. For long-term storage, freeze portions for up to 3 months.
