  1. Begin by peeling and dicing the fresh peaches. Reserve a few pieces for garnishing later, if desired.
Making the Peach Mousse
  1. In a mixing bowl, whip the heavy cream with the powdered sugar until soft peaks form.
  2. Gently fold in the diced peaches and vanilla extract. This luscious mousse is now ready!
Layering the Trifle
  1. In a trifle dish or individual cups, start with a layer of ladyfinger cookies or sponge cake.
  2. Then, spoon over a layer of the peach mousse.
  3. Next, add a layer of vanilla yogurt.
  4. Repeat these layers until you run out of ingredients, ensuring the top layer is mousse.
Chilling
  1. Cover your trifle with plastic wrap and refrigerate for at least 1 hour to allow flavors to meld and the mousse to set.
Garnishing and Serving
  1. Before serving, add the reserved diced peaches on top and a sprinkle of mint leaves for a beautiful touch.

Notes

For a lighter version, consider using Greek yogurt instead of heavy cream for a healthier mousse. Chill the trifle for at least an hour; this allows the flavors to develop beautifully. Storing: Cover tightly with plastic wrap and refrigerate for 2-3 days. If you need to reheat sponge cake, a quick microwave visit for about 10 seconds should suffice.
