Method
 

Preparation
  1. Wash and hull the strawberries, then slice them in half or quarters.
  2. In a medium saucepan, combine the sliced strawberries, sugar, and lemon juice. Stir gently.
  3. Place the saucepan over medium heat and simmer for about 10-15 minutes, stirring occasionally.
  4. Mash the strawberries with a potato masher or use an immersion blender to achieve your desired consistency.
  5. Remove from heat once thickened slightly, allow to cool, and store in the fridge.

Notes

Store in an airtight container in the fridge for up to a week or freeze for three months. Reheat gently on low heat.
