  1. Wash the strawberries thoroughly, remove the stems and hulls, then chop them into small pieces.
  2. In a large pot, add the chopped strawberries and mash with a potato masher or fork to your desired consistency.
  3. Stir in the granulated sugar and lemon juice. Allow the mixture to sit for about 10 minutes.
Cooking
  1. Place the pot over medium heat and bring the mixture to a boil, stirring occasionally to prevent sticking.
  2. Once it reaches a rolling boil, reduce the heat and let it simmer for about 15 minutes, or until it thickens to your liking.
  3. If using fruit pectin, mix it with 1 cup of sugar in a separate bowl, then stir it into the jam during the last 5 minutes of cooking.
  4. To check for doneness, drop a spoonful onto a cold plate; if it stays separated, your jam is done.
  5. Carefully ladle the hot jam into sterilized jars, leaving about 1/4 inch of space at the top. Seal the jars and let them cool at room temperature.
