  • 1 cup fresh strawberries, hulled and sliced Use ripe and sweet strawberries for best flavor.
  • 1/2 cup sugar Adjust to taste depending on the sweetness of strawberries.
  • 1 teaspoon vanilla extract Provides additional flavor.
  • 1 tablespoon lemon juice Enhances the flavor of strawberries.
  • 1 cup heavy cream Whipped into soft peaks for texture.

Preparation
  1. Rinse and hull the fresh strawberries, then slice them into halves or quarters.
  2. In a blender or food processor, combine the cottage cheese, sugar, vanilla extract, and lemon juice. Blend until smooth and creamy.
  3. Pour the blended cottage cheese mixture into a bowl and gently fold in the sliced strawberries.
  4. In a separate bowl, whip the heavy cream until soft peaks form and gently fold this into your cottage cheese and strawberry mixture.
  5. Transfer the mixture into an airtight container and freeze for at least 4 hours or until firm.
  6. Once frozen, scoop out the ice cream, serve in bowls, and enjoy!

Notes

For best flavor, use fresh strawberries. Adjust sweetness with agave syrup or honey if desired. Keep stored in an airtight container in the freezer for 2-3 weeks.
