Preparation
- Preheat your oven to 350°F (175°C).
- Wash the strawberries thoroughly, then blend them in a food processor or blender until smooth. Set aside.
- In a large mixing bowl, beat together the softened butter and sugar until the mixture is light and fluffy (about 2-3 minutes).
- Stir in the egg and vanilla extract, mixing until well blended.
Mixing and Baking
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
- Gently fold in the strawberry puree, being careful not to overmix.
- Using a spoon or cookie scoop, drop mounds of dough onto a baking sheet lined with parchment paper, spacing them a few inches apart.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Once baked, let the cookies cool on the sheet for a few minutes before transferring them to a wire rack.
