  • 1/2 cup butter, softened Make sure butter is at room temperature.
  • 1 unit egg
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Wash the strawberries thoroughly, then blend them in a food processor or blender until smooth. Set aside.
  3. In a large mixing bowl, beat together the softened butter and sugar until the mixture is light and fluffy (about 2-3 minutes).
  4. Stir in the egg and vanilla extract, mixing until well blended.
Mixing and Baking
  1. In another bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  2. Gently fold in the strawberry puree, being careful not to overmix.
  3. Using a spoon or cookie scoop, drop mounds of dough onto a baking sheet lined with parchment paper, spacing them a few inches apart.
  4. Bake for 12-15 minutes, or until the edges are lightly golden.
  5. Once baked, let the cookies cool on the sheet for a few minutes before transferring them to a wire rack.

Notes

To keep your cookies fresh, store them in an airtight container at room temperature for up to 5 days. They can be frozen for up to 3 months, placing parchment paper between layers to avoid sticking. Thaw at room temperature or microwave for a few seconds before serving.
