Preparation
- In a mixing bowl, combine the all-purpose flour, cocoa powder, granulated sugar, and salt.
- Add the diced, chilled butter. Using a pastry cutter or your fingers, mix until it resembles coarse crumbs.
- Slowly add cold water, one tablespoon at a time, mixing until the dough comes together. Be careful not to overmix.
- On a lightly floured surface, roll out the dough until it’s about 1/8 inch thick. Cut rectangles about 3x4 inches long.
Assembling
- Place half of the rectangles on a baking sheet lined with parchment paper.
- On each rectangle, add a sprinkle of chocolate chips, a few mini marshmallows, and a pinch of graham cracker crumbs.
- Top with another rectangle of dough. Press the edges together firmly with a fork to seal.
- Beat the egg in a small bowl and brush the tops of the pastries with the egg wash for that golden finish.
Baking
- Preheat your oven to 375°F (190°C) and bake for 15-20 minutes until golden brown.
- Once cooled, drizzle with icing made from powdered sugar mixed with a small amount of milk for desired consistency.
Notes
To store, place in an airtight container at room temperature for up to 3 days. To freeze, wrap each pastry in plastic wrap and store in a freezer-safe container for up to 3 months. Reheat in the oven at 350°F (175°C) for about 10 minutes.
