  • 1 head cabbage, chopped
  • 1 large onion, diced
  • 2 pieces carrots, sliced
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
Broth and Seasoning
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: herbs like thyme or bay leaf for added flavor

Preparation
  1. Begin by prepping all your vegetables. Chop the cabbage, dice the onion, slice the carrots, and chop the celery. Mince the garlic.
  2. In a large pot, heat the olive oil over medium heat. Once hot, add the diced onion and sauté for about 3-4 minutes until it starts to turn translucent.
  3. Stir in the garlic, carrots, and celery. Cook for an additional 5 minutes, until the vegetables begin to soften.
  4. Add the chopped cabbage, diced tomatoes, and vegetable broth. Season with salt and pepper.
  5. Bring the soup to a boil, then reduce the heat to low and let it simmer for 20-25 minutes. Stir occasionally, and add herbs for that extra flavor kick if you wish.
  6. Taste the soup toward the end and adjust seasoning as needed. Remove from heat and let it sit for a few minutes to blend the flavors.
  7. Ladle the soup into bowls, and enjoy it warm. Feel free to top with fresh herbs or a splash of lemon juice for an added burst of flavor.

Notes

You can substitute with your favorite veggies like kale or spinach. For deeper flavors, simmer longer. Avoid rushing the sauté process for better flavor.
