- Begin by prepping all your vegetables. Chop the cabbage, dice the onion, slice the carrots, and chop the celery. Mince the garlic.
- In a large pot, heat the olive oil over medium heat. Once hot, add the diced onion and sauté for about 3-4 minutes until it starts to turn translucent.
- Stir in the garlic, carrots, and celery. Cook for an additional 5 minutes, until the vegetables begin to soften.
- Add the chopped cabbage, diced tomatoes, and vegetable broth. Season with salt and pepper.
- Bring the soup to a boil, then reduce the heat to low and let it simmer for 20-25 minutes. Stir occasionally, and add herbs for that extra flavor kick if you wish.
- Taste the soup toward the end and adjust seasoning as needed. Remove from heat and let it sit for a few minutes to blend the flavors.

You can substitute with your favorite veggies like kale or spinach. For deeper flavors, simmer longer. Avoid rushing the sauté process for better flavor.
