  • 2 cups sugar
  • 2 cups water
  • 1 tablespoon lemon juice For extra zing.

Preparation
  1. In a medium saucepan, take the washed raspberries and mash them lightly with a fork or potato masher.
  2. Add the sugar and water to the saucepan with the mashed raspberries.
  3. Place the saucepan over medium heat and stir the mixture until it comes to a gentle boil (about 5-7 minutes).
  4. Once it reaches a boil, reduce the heat and let it simmer for about 10 minutes.
  5. Using a fine mesh strainer or cheesecloth, strain the cordial into a large bowl or pitcher, pressing down gently on the solids.
  6. Stir in the lemon juice and lemon zest.
  7. Allow the cordial to cool completely before transferring it to a clean bottle.
  8. Store it in the refrigerator for up to two weeks.

Notes

Keep the cordial in an airtight container in the refrigerator for freshness. For longer storage, freeze in an ice cube tray.
