Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine pumpkin puree, sugar, milk, eggs, vanilla extract, ground cinnamon, and ground nutmeg. Mix until smooth.
- Fold in the chopped pecans, flour, baking powder, and salt. Stir until just combined.
- Melt the butter and pour it into a 9 x 13 inch baking dish. Swirl to coat the bottom.
- Pour the pumpkin mixture over the melted butter without mixing.
Baking
- Place the dish in the preheated oven and bake for 40-45 minutes, until the center is set and the top is golden-brown.
- Allow the cobbler to cool for about 10 minutes before slicing.
Serving
- Serve warm, optionally topped with ice cream or whipped cream.
Notes
For variations, consider using walnuts or almonds instead of pecans. Store leftovers in the refrigerator for up to 3 days.
