Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the canned pumpkin, vegetable oil, sugar, and eggs. Whisk until smooth and creamy.
- In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg until there are no lumps.
- Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
- Line your muffin tin with liners and fill each cup about 2/3 full with the batter, optionally topping with cinnamon or nuts.
Baking
- Place the muffin tin in the preheated oven and bake for 20-25 minutes, testing for doneness with a toothpick.
- Once baked, let them cool in the tin for about 5 minutes and then transfer to a wire rack to cool completely.
Notes
Store muffins in an airtight container at room temperature for up to 3 days, refrigerate for up to a week, or freeze for up to 3 months. Reheat in the microwave or oven to restore texture.
