Preparation
- Start by washing, pitting, and chopping 2 lbs of plums.
Cooking
- In a large saucepan, add the chopped plums, 1 cup of sugar, and 2 tablespoons of freshly squeezed lemon juice. If desired, sprinkle in some optional spices.
- Over medium heat, stir the mixture until the sugar dissolves and the plums begin to release their juices.
- Bring it to a gentle boil, then reduce the heat to low. Simmer uncovered for about 30-40 minutes, stirring occasionally, until thickened.
- Remove from heat and blend the mixture for a smooth texture using an immersion blender or regular blender.
- Allow the plum butter to cool completely before transferring it to sterilized jars.
Storage
- Seal jars tightly and store in the refrigerator for up to two weeks or freeze for longer storage.
Notes
Adjust the sweetness by tasting as you go. You can also experiment with other spices for unique flavors. Store in airtight containers in the freezer for up to six months.
